Carrot Cake Cookies

Recipe

Preparation time - 10 minutes

Baking time - 15 minutes

Serves - 3-4

Ingredients

50g grated Carrots

25g Peanut butter

30g Yogurt

1 tbsp Milk

30g Maple syrup

30g Sugar

50g AP Flour

1 tsp Baking powder

2 tsp ground Cinnamon

1/4 tsp All spice powder

Method

  1. Add the grated carrots in a bowl along with peanut butter, yogurt, milk, maple syrup and sugar. Whisk until fully combined.

  2. Fold in the flour, baking powder and spices.

  3. Place the batter onto a baking tray (use an ice cream or cookie scooper)

  4. Bake, in a preheated oven @ 170°C, for 12-15 minutes.

  5. Allow them to cool and serve immediately.
