Pesto
An easy, no fuss pesto that tastes fresh and delightful.
Recipe
Ingredients
2 cups Basil
1/2 cup Grated parmesan
1/3 cup Cashews
1/4 cup Olive oil
Lemon zest
Method
Wash the basil, add to a blender and grind a little.
Add in the olive oil, cashews, lemon zest and parmesan and blend till smooth.
Chill and serve.
Chef’s tips
Don’t add salt in the pesto as parmesan is generally heavily salted.
You can substitute cashews with pine nuts or almonds.
You can store the pesto in the refrigerator for 5-8 days.
Accompaniments
You can serve the pesto as a dip, with crackers or sliced veggies.
You can use the pesto mixed with a bit of heavy cream as a pasta sauce.
