Risotto

Serves - 2-3
Ingredients
1.5 tbsp Butter
1.5 tbsp Olive oil
1 tbsp minced Celery
1 tbsp minced Onion
1 cup Risotto rice
3.5 cups Vegetable stock / water
1 tbsp Butter
2 tbsp Parmesan cheese
Method
1. In a heavy bottom pan, add butter and olive oil. Once hot add in the celery and onions.
2. Once the celery and onions are cooked, add in the risotto rice.
3. Keep mixing till the rice turns lighter in colour.
4. Gradually add in the vegetable stock, one cup at a time.
5. Once the rice is fully cooked and looks done (keep tasting) add in the butter and Parmesan.
6. Mix well, add in pepper, salt and some herbs.
