Thai Style Green Curry

Recipe

Preparation time - 15 minutes

Cooking time - 20/25 minutes

Serves 2-3

Ingredients

Green paste (recipe below)

1 cup chopped carrots

1 cup broccoli florets

1 cup sliced zucchini

500ml coconut milk

1 block firm tofu

1/4th cup olive oil

Juice of 1/4 piece of a lemon

3 birds eye chillis

5 curry leaves

Salt A/R

Half an onion sliced thin (optional)

Green paste-
2 cups coriander

1/3 cup lemon grass

1 small piece ginger

1 heaping tbsp Greek yogurt or Hung yogurt

2 tbsp oil

1/2 cloves garlic

2 green chillis

Method

Green paste-
Blend all the ingredients into a fine paste.

Curry-
1. In a pan, pour olive oil. Once the oil is hot, add in the curry leaves and onion. Cook till the onions brown.

2. Add in the green paste and incorporate fully, once mixed add in the coconut oil and mix.

3. Once the curry starts bubbling, add the carrots, broccoli and zucchini, and increase the heat.

4. Once the veggies are almost cooked, add in the tofu and birds eye chillies.

5. Add in the lemon juice (alter according to taste), cover and cook.

6. Serve with rice.
