Spanakopita

Spanakopita is a savoury Greek spinach pie containing feta and onions, wrapped in a filo pastry sheets.

Recipe

Preparation time- 10 minutes

Cooking time- 15 minutes + 15 minutes baking

Assembly time- 15 minutes

Ingredients

8 pcs Filo pastry sheets

50g Feta cheese

300g Fresh spinach (blanched)

50g Diced onions

50g Olive oil

Melted Butter as required

Black pepper to taste

Method

  1. In a large frying pan, sweat onions with olive oil.

  2. Add blanched spinach and pepper, and cook till the water evaporates.

  3. Take the mixture off the heat, and allow to cool. Once cooled fold in the feta cheese.

  4. Place filo sheets on top of each other and cut into 4/5 long pieces. Brush them with melted butter.

  5. Place the filling on one corner and tightly roll into triangles. Keep brushing with butter after each roll.

  6. Once your triangle is formed, brush with melted butter and bake at 160°C (in a preheated oven) for 12/15 minutes or until golden brown.

  7. Top with sesame seeds and serve hot.

Assembly

  1. You could also assemble the spanakopita in an oven proof dish. Start by layering the spinach mixture, top that with filo 4 filo sheets and brush generously with butter. Repeat the same steps once more and bake at 180°C for 12 minutes.

  2. Top with sesame seeds and serve hot!
