Muhammara

Muhammara or “roasted red pepper dip” is a traditionally spicy, red pepper dip, originally from Turkey. It is closely associated with the middle eastern palette and thus, has a very rich flavour profile.

Recipe

Preparation time- 10 minutes

Cooking time- 15 minutes + 12/15 minutes to roast the bell pepper

Assembly time- 5 minutes

Ingredients

2 Red bell peppers - roasted on a flame, de-skinned and de-seeded

20g Pecan nuts or Walnuts

4 tsp Chilli paste (recipe below)

4 Garlic cloves (can be omitted to make a no-onion/garlic muhammara)

4 Black peppercorns

10g Cumin powder

30g Panko breadcrumbs- toasted

15g Coriander stems

1 tbsp Olive oil

Salt as required

Lemon juice as required

Chilli paste

To make the chilli paste, soak 5/6 dry red chilli in hot water for an hour and blend to a paste.

Method

  1. In a blender, blend the bell peppers, gradually add each of the ingredients and blend.

Assembly

  1. Add the muhammara in a shallow bowl.

  2. Top with pomegranate seeds and a drizzle of olive oil.
