Carrot Fries

Recipe

Serves 2-3

Preparation time - 5 minutes

Baking time - 25 minutes

Ingredients

2 medium carrots

2 tbsp olive oil

1 tbsp fresh parsley, chopped

1 tsp paprika / chilli flakes

1 tsp dried oregano

1 tsp salt

1 tsp pepper

Method

  1. Preheat oven to 220°C.

  2. Cut carrots into fries and combine in a large bowl with olive oil, parsley, paprika, salt, and pepper.

  3. Place on baking sheet lined with parchment paper, or a greased baking tray in a single layer. Bake for 25 minutes, flipping halfway.

  4. Allow to cool slightly before eating.

Chef’s tips

  1. You can add garlic too, by mincing the garlic and combining it with the olive oil and parsley.

  2. Switch this recipe up by making it with zucchini or eggplant.
