Roasted Parmesan Garlic Potatoes

Preparation time - 5 minutes

Baking time - 20 minutes

Ingredients

450g baby potatoes halved

2 tbsp olive oil

5 cloves garlic, minced

1 tsp dried thyme

1/2 tsp dried oregano

1/2 tsp dried basil

1/2 tsp dried chilli flakes

1/3 cup freshly grated Parmesan

Salt A/R

Ground black pepper A/R

Method

  1. In a large bowl, add the potatoes. Start seasoning them with olive oil and all the spices. Mix well.

  2. On a lined baking tray, add the potato halves side by side, and bake in a preheated oven at 200°C for 20 minutes, or until golden brown.

  3. Top with some more Parmesan before serving.
