Christmas Slaw

Recipe

Preparation time - 10 minutes

Cooking time - 5 minutes

Serves - 2-3

Ingredients

Salad

2 carrots, halved

½ white cabbage, shredded

100g pecans or walnuts, roughly chopped

bunch spring onions, sliced

2 red peppers, deseeded and sliced

Dressing

2 tbsp maple syrup

2 tsp Dijon mustard

8 tbsp olive oil

4 tbsp cider vinegar

Method

  1. Peel strips from carrots using a vegetable peeler, shred the cabbage, and chop the sponge onions.

  2. Mix all the salad ingredients in a large bowl.

  3. Combine all the dressing ingredients in a jam jar or bowl, put the lid on and shake well or whisk for 4-5 mins

  4. Toss the salad well when you're ready to eat it.

Chef’s tips

  1. The salad and dressing can be kept, separately in the fridge for up to four days.
