Spicy Cucumber Salad

Recipe

Preparation time - 30 minutes

Cooking time - 10 minutes

Ingredients

3 cucumbers (cut into 1/2- inch thick half rounds)

2 tsp salt

1 tsp soy sauce

1 tbsp white sugar

2 tsp rice vinegar

1.5 tsp toasted sesame oil

1 tsp hot chili oil

½ tsp red pepper flakes

Method

  1. Place cucumbers into a colander or sieve, sprinkle with salt, and let drain at least 30 minutes.

  2. Shake off excess liquid but don't rinse the cucumbers.

  3. Whisk soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil, and red pepper flakes in a salad bowl.

  4. Stir in cucumbers to coat with dressing. Chill before serving.
