Lemon & Mint Sorbet

Recipe

Preparation time - 10 minutes

Cooking time - 5 minutes

Serves - 2-4

Ingredients

1/2 cup Lemon juice

1/2 cup Sugar

1/2 cup Water

Handful of mint leaves

1 tbsp Lemon zest

4 cups Ice

Method

  1. In a pot combine the sugar, lemon zest and water. Once it starts simmering take it off the heat.

  2. Take the mixture off the heat and add in the lemon juice. Mix well.

  3. Allow the mixture to cool completely.

  4. In a blender add the cooled mixture, mint leaves and ice.

  5. Blitz on high until completely blended.

  6. Add to cups and serve immediately !

  7. (You can also set the sorbet in a pan, in the freezer for 8-10 hours and serve it the next day)
