Banana Bread

Recipe

Preparation time - 10 minutes

Cooking time - 60 minutes

Serves - makes 5-6 mini loafs

Ingredients

2 cups AP Flour

1 tsp Baking powder

1/2 tsp Baking soda

1 tsp Cinnamon powder

1/2 + 1/4 tsp Coffee powder

1/2 tsp Ginger powder

1/2 cup Softened butter

1/4 cup Caster sugar

1 + 1/2 cup Mashed bananas (approximately 3)

1/4 cup + 2 tbsp Milk

1/4 cup Crushed walnuts

1/4 cup Chocolate chips

Method

  1. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, coffee powder and ginger powder.

  2. In a separate bowl beat butter and sugar, until the mixture is fluffy.

  3. Mix in the bananas and use a fork to make sure it is well incorporated.

  4. Combine dry ingredients with the wet ingredients but do not over mix. Gently fold in the milk.

  5. Fold in the crushed walnuts and chocolate chips.

  6. Transfer the batter into the prepared loaf pan.

  7. Bake in a preheated oven at 180°C for 40-50 minutes. (Mine took 48 minutes).

  8. Allow them to cool, demoed, slice and serve.
