Orange Cranberry Loaf

Recipe

Serves - 6-7

Preparation time - 10 minutes

Baking time - 70-75 minutes

Ingredients

1 + 1/2 cups AP flour

1 tsp baking powder

1 cup sugar

Zest of half an orange

3/4 cup milk

1/2 cup oil

1/3 cup yogurt

1 tbsp orange juice

1 tsp vanilla extract

1 cup fresh / dried cranberries

Method

  1. Preheat oven to 180°C.

  2. In a large bowl sift together dry ingredients, flour, baking powder, salt, sugar and orange zest. Set aside.

  3. In a separate bowl, whisk together all wet ingredients- milk,oil, yogurt, orange juice, and vanilla extract.

  4. Slowly mix in wet ingredients to dry ingredients.

  5. Stir until just combined then fold in the cranberries.

  6. Pour batter into prepared loaf pan and bake 70-75 minutes. At the 60 minute mark, keep an eye on it from there.

  7. Allow to cool, slice and enjoy!!
