Sticky Date Pudding

Preparation time - 5 minutes
Cooking time - 15 + 15 minutes
Serves - makes 6 portions
Ingredients
1 cup Pitted Dates
3/4 cup Milk
1 tsp Baking Soda
1/2 cup Oil
1/2 tsp Vanilla Extract
1/2 cup All-Purpose Flour
1/4 cup Almond Flour
1/2 tsp Baking Powder
1/2 tsp Cinnamon Powder
1/4 tsp Nutmeg Powder
1/2 tsp Ginger Powder
1/2 tsp Salt
Toffee sauce -
1/2 cup Brown Sugar
1/2 cup Cream
1/4 tsp Salt
Method
Roughly chop the pitted dates and place them in a heat-proof bowl. Sprinkle the Baking Soda over the dates, then pour oven the warm milk. Set aside.
Preheat your oven on 180°C. Generously grease your pan.
Transfer into the bowl of your food processor with the oil and vanilla extract. Process until thick and smooth. Pour into a seperate large bowl.
Sift in all the dry ingredients: Plain Flour, Almond flour, Baking Powder, Cinnamon Powder, Nutmeg, Ginger and Salt. Mix in all the ingredients until combined.
Pour the batter in the pans, about 3/4 of the height.
Bake for 15 minutes. Leave to cool down for about 10 minutes, then flip the pan to release the puddings.
Toffee Sauce
1. While the puddings are in the oven, start making the sauce.2. Place the Brown Sugar, Cream and Salt in a small pot. Melt the sugar on low heat then increase the temperature to medium and leave to cook until till thick. Remove from the heat when glossy and thick.
Serve the Sticky Date Pudding warm with the toffee sauce.
Chef’s Tips
Allow the date and milk mixture to sit for at least 20 minutes to allow the dates to break down.
