Vegan Chocolate Chip Cookies
These melt in your mouth vegan chocolate chip cookies are perfect for satisfying your sugar cravings with the added benefit of being vegan. Beware as they are known to wake the Cookie Monster in you!

Preparation Time- 20 minutes
Chilling time- 20/25 minutes
Baking Time- 10 minutes
Serves- Makes 10/12 cookies
Ingredients
2 cups All purpose flour
0.5 cup Sugar
3/4th cup Dark brown sugar (can be substituted with light brown sugar/ coconut sugar/ date sugar)
1 tsp Salt
0.5 tsp Baking soda
0.5 cup Coconut oil (melted)
1/4th cup Almond milk (you can use any non-dairy milk of your choice)
1 tsp Vanilla extract
100g Vegan Milk Chocolate callets (you can also use chocolate chips)
110g Vegan Dark chocolate callets (you can also use chocolate chips)
A handful of mixed chocolate callets
Method
In a bowl, whisk together sugar, brown sugar and coconut oil until the sugar completely dissolves.
Whisk in the plant based milk and vanilla, in the sugar mixture.
Sift the flour, salt and baking soda and gently fold in the above mixture. BE CAREFUL NOT TO OVER MIX.
Fold in the chocolate chips in the batter, and chill the dough for 20/25 minutes.
Preheat your oven to 180°C and wait while the dough chills.
Once the dough is chilled, roll them into balls, slightly flatten and place on a parchment paper, leaving 2 inches space between each ball.
Bake for 10-12 minutes or until golden brown.
Cool completely

Chef’s tips
If you are using chocolate chips instead of callets, use 115g each, i.e 115g of dark chocolate chips and 115g of milk chocolate chips.
Make sure to chill the dough for a good amount of time as the dough will hold its texture and won’t spread too much.
I suggest making this recipe vegan, even if that isn’t your preference as this recipe is best suited for vegan ingredients and you won’t know the difference between this and a non-vegan cookie!
