Tiramisu

Ingredients
Vanilla Sponge
205g All purpose flour
200g Caster sugar
0.5 tsp Baking powder
0.5 tsp Salt
120g Water
120ml Refined oil
0.5 tsp Vanilla
Method
Preheat your oven to 180°C. Sift together the flour, baking powder, salt. Add in the caster sugar and whisk to combine.
In another bowl, thoroughly whisk the oil, water and vanilla. Add in the dry ingredients and gently whisk to combine. Keep whisking until the batter is free of lumps.
Transfer the batter to a greased and lined tin, and put to bake for about 10 minutes or till golden brown. You could also insert a skewer once you think its done, and wait till it comes out completely clean.
Allow the sponge to completely cool before removing it from the tin.
Coffee Concentrate
200ml water
1.5 tbsp coffee powder (you can substitute this with a 40ml espresso shot)
1 tbsp sugar (this can be altered to your preference)
Method
Bring the coffee, sugar and water mixture to a boil and cool.
Mascarpone Cream
20g Caster sugar (can be altered to your preference)
200g Mascarpone cheese
250g Whipping cream
Method.
In a separate bowl, whip the cream until it comes to stiff peak, followed by the mascarpone and the
Slowly fold in the mascarpone in the whipped cream.
Assembly
In a large transparent bowl or dish, put a single layer of the coffee soaked vanilla sponge.
Next, pour half the mascarpone cream onto the sponge.
Repeat the process until there are 4 layers in total and cover the top layer of the mascarpone cream with cocoa powder.
Chill for 10-12 hours and enjoy!!
Chef’s tips
You can substitute the vanilla sponge with ladyfingers. If you are using ladyfingers, while assembling soak each finger in the coffee concentrate till its completely soaked and cover the entire bottom layer. Coat the ladyfinger layer with the mascarpone cream and repeat the process once more. Coat with cocoa powder and chill.
You cannot substitute mascarpone cheese with any other cheese, or whipping cream with fresh cream as you won’t get the perfect creamy consistency.
If you wish to use alcohol in this recipe, mix 2 tbsp of marsala wine / dark rum or kaluha, while whipping the mascarpone.
Make sure to chill the cream, whipped mascarpone, after each process.
As this is a time consuming recipe make sure to plan it out well and have the ingredients ready a day prior.
