Chipotle Black Bean Soup

Recipe

Preparation time - 10 minutes

Cooking time - 20-25 minutes

Serves - 3-4

Ingredients

2 tbsp Oil

1 Onion diced

3 Garlic cloves

1/2 Red pepper diced

1 tsp Cumin powder

1 tsp Chilli powder

1 + 1/2 cup Chipotle salsa

4 cups vegetable stock

1 tin Black beans

1 tin Corn kernels

Method

  1. In a large pot, add the oil. Once the oil is hot add the onion and red pepper, and cook for 1-2 minutes.

  2. Add the garlic and cook for another minute.

  3. Add the spices and cook for 1-2 minutes.

  4. Pour in the salsa and vegetable stock. •Allow the soup to come to a boil. Once the soup is boiling, add the corn kernels and black beans.

  5. Let the soup cook for 20-25 minutes.

  6. Taste and adjust seasoning if required.

  7. Garnish with fresh jalapeños, sour cream, avocado or tortilla chips.

  8. Serve immediately.
