Ginger Garlic Noodle Soup

Recipe

Preparation time - 10 minutes

Cooking time - 20-25 minutes

Serves - 3-4

Ingredients

1 tbsp Olive Oil

1 Onion - sliced

2 tbsp Garlic - chopped

2 tbsp Ginger - chopped

2 tbsp Spring Onion whites - chopped

3 Star anise

1 ltr Water

1 tbsp Stock Powder

1.5 tbsp Light Soy Sauce

10-15 Spinach leaves - shredded

4 tbsp Spring Onion Greens

4-5 Mushrooms - sliced

1/2 cup Broccoli - sliced

Rice noodles - cooked

Garnish -

Toasted sesame seeds

Spring onion greens

Chilli flakes

Method

  1. Heat oil in a heavy bottom pan, add in the onion, cook this for 2 mins till they're translucent.

  2. Next add in the ginger, garlic and spring onion whites. Cook for a minute till flavourful.

  3. Add in star anise and pour in the water.

  4. Add stock powder and soy sauce.

  5. Cover with a lid and cook for 8-10 minutes till it comes to a good boil.

  6. Next add in all the broccoli and mushrooms.

  7. Cook for 2-3 minutes, and add the shredded spinach. Remove the star anise.

  8. Pour over the boiled noodles, and cook for 5-7 minutes.

  9. Garnish with toasted sesame seeds, sponge onion greens and serve hot.

Chef’s tips

  1. You can add carrots or zucchini or peppers to make this more flavourful.
