Sesame & Peanut Butter Ramen

Ingredients
3 birds eye chillis
1/2 tbsp tahini
1/2 tbsp peanut butter
2 spring onions stalks
3 cloves of garlic
1/2 tbsp date syrup
2-3 tbsp sesame oil
1 packet ramen noodles
Toasted sesame seeds for garnish
Method
Finely chop the birds eye chilli, garlic and spring onion.
Add the chopped chilli’s, garlic and spring onions in a heat proof bowl, along with the peanut butter, tahini and date syrup.
Boil the noodles as per the instructions on the packet and keep aside.
Heat the sesame oil, and pour it over the prepared veggies.
Mix thoroughly and add the noodles in. Mix this well.
Garnish with toasted sesame seeds.
Chef’s tips
You can change the amount of birds eye chilly’s to make it more or less spicy.
The date syrup can be subbed by maple syrup, even though I highly recommend date syrup.
Add some chopped coriander leaves to this recipe for a fresher taste.
Adding chopped veggies helps elevate this dish and make for the perfect quick dinner.
