Cheese Vegetable Turnover

Ingredients

150g Puff pastry

25g Eggplants

25g Red bell pepper

25g Green bell pepper

25g Cheese

10g Onion

10g Oil

Salt A/R

Black pepper A/R

Method

  1. Heat oil in a pan and sauté eggplant till golden brown, add the onion, bell peppers and zucchini and cook till soft.

  2. Mix the cheese black pepper with the cooked vegetables and season as required.

  3. Roll the puff pastry to 4 mm thickness. Cut into a circle or a 10x10cm square. Fill with vegetable mixture and moisten the edges with milk / egg wash.

  4. Fold over to close and press gently, without disturbing the edges.

  5. Place the turnovers on a greased pan, chill and bake for 10-12 min at 180°C in a preheated oven.
