Hiyayakko
A Japanese summertime salad, that is spicy, sweet and hits all the right spots!
Recipe
Preparation time - 5 Minutes
Cooking time - 5 minutes
Serves - 2/4
Ingredients
1 block silken tofu
2 chopped birds eye chillis
5 shredded Thai basil leaves
1/2 cup diced cucumber
2 tbsp light soy sauce
2 tsp chilli oil
0.5 tbsp vinegar
1 tbsp maple syrup
1 diced garlic clove
1 tsp grated thai ginger
1 tsp sesame seeds
Method
1. Mix all the ingredients except the basil and cucumber
2. Get a block of tofu out of the fridge and garnish with shredded basil and cucumber
3. Pour sauce over the tofu, chill and enjoy
Chef’s tips
Use a block of firm silken tofu, rather than soft as it holds the shape better.
Bring your tofu out of the fridge once you’ve made the sauce so it’s cooler while consuming.
