Preparation time - 10-15 minutes

Cooking time - 5 minutes

Serves - 3-4

Ingredients

1 Lettuce head

1 cup Persian cucumbers

2 Tomatoes

1/4 cup Parsley

1 Small red onion

1/2 cup Black olives

Dressing -

1/4 cup Olive oil

1 tbsp Pomegranate molasses

2 tbsp Lemon juice

1 tsp Mint powder

1/4 tsp Fresh pepper

Salt A/R

Pita crisps

Method

  1. Roughly chop the lettuce and parsley and set aside.

  2. Chop the cucumbers, onion and tomatoes into cubes and set aside.

  3. In a separate bowl, add all the ingredients for the dressing and whisk well until fully combined.

  4. In a fresh bowl, add the leaves and vegetables. Pour over the dressing and toss well.

  5. Add in the pita crisps, toss and serve immediately.
