Green Goddess Salad

Recipe

Preparation time -10 minutes

Cooking time -5 minutes

Serves - 3-4

Ingredients

1 small Cabbage

3/4 Baby cucumbers

1/4 cup Chives (optional)

Dressing

1 cup Spinach

1/3 cups Almonds

Juice of 1 lemon

1/3 cup Parmesan

2 tbsp Apple Cider Vinegar

1/4 cup Olive oil

1 small Avacado / 1/2 regular Avacado

2 Jalapeños

1/2 Onion

2 cloves of Garlic

Method

  1. Chop the cucumbers, cabbage and chives finely. Set aside.

  2. In a blender add the spinach, olive oil, almonds, lemon juice, e cider vinegar, Parmesan, olive oil, Avacado, onion, garlic and jalapeños.

  3. Blend till smooth and pour over the chopped veggies.

  4. Mix well and serve with crisps.
