Za’atar roasted Cauliflower with Dates and Pine nuts

Recipe

Preparation time - 10 minutes

Cooking time - 30-35 minutes

Serves - 3-4

Ingredients

1 head cauliflower (cut into florets)

3 tbsp olive oil

1 tbsp za’atar spice

1 tsp salt

½ tsp black pepper

¼ cup pine nuts

6 Medjool dates (pitted and diced)

Method

  1. Preheat the oven to 220°C.

  2. Place the cauliflower florets in a bowl and drizzle with the olive oil.

  3. Sprinkle with za'atar spice, salt and pepper and toss to combine. •Cook for 20 to 25 minutes or until golden brown, stirring halfway through.

  4. While the cauliflower is cooking, heat a small pan on medium heat.

  5. Toast the pine nuts and dates in a dry pan over medium heat for 1-2 minutes.

  6. In a large mixing bowl, stir together the roasted cauliflower, dates and pine nuts.
