Classic French Brioche

Recipe

Preparation time - 5 minutes

Cooking time - 10 minutes

Proofing time - 45 + 45 minutes

Baking time - 10 minutes

Ingredients

250g All Purpose Flour

5g Yeast

4g Salt

35g Sugar

40ml Cold Milk

60g Butter

2 medium Eggs

Method

  1. Mix flour, yeast, salt and sugar well. Add milk and beaten egg, one by one . Knead it to soft, smooth dough.

  2. Add the room temperature butter and knead it in, to form silky, soft dough.

  3. Rest it for 45 min at room temperature or in a proofer.

  4. Knock back the dough, cut to 10-12 pieces and shape them.

  5. Place them into brioche moulds or on tray and allow them to prove for 35-45 minutes or until doubles in volume.

  6. Brush them with egg wash.

  7. Bake at 160°C for 10 minutes.
