Classic French Brioche

Preparation time - 5 minutes
Cooking time - 10 minutes
Proofing time - 45 + 45 minutes
Baking time - 10 minutes
Ingredients
250g All Purpose Flour
5g Yeast
4g Salt
35g Sugar
40ml Cold Milk
60g Butter
2 medium Eggs
Method
Mix flour, yeast, salt and sugar well. Add milk and beaten egg, one by one . Knead it to soft, smooth dough.
Add the room temperature butter and knead it in, to form silky, soft dough.
Rest it for 45 min at room temperature or in a proofer.
Knock back the dough, cut to 10-12 pieces and shape them.
Place them into brioche moulds or on tray and allow them to prove for 35-45 minutes or until doubles in volume.
Brush them with egg wash.
Bake at 160°C for 10 minutes.
