Vegan Brownie Skillet

Recipe

Preparation time - 5 minutes

Cooking time - 20 minutes

Serves - 4-5

Ingredients

1/4 cup Chocolate (chopped)

3 tbsp Coconut oil

2 tbsp Sugar

1/4 cup Maple syrup

1/2 cup Peanut butter

2 Flax eggs (2 tbsp flax meal & 6 tbsp cold water)

1/3 cup Almond flour

1/3 cup Cocoa powder

1/2 tsp Baking soda

1/4 tsp Salt

Method

  1. Make the flax egg and set aside.

  2. In a bowl, add the chocolate and warmed coconut oil. Stir until fully combined.

  3. Pour in the maple syrup, flax eggs, peanut butter and sugar. Mix well.

  4. Add the almond flour, cocoa powder and salt. Fold the mixture.

  5. Pour into a greased skillet.

  6. Bake in a preheated oven @ 180°C for 18-20 minutes.

  7. Top with ice cream and serve.

Chef’s tips

  1. You can also make the brownies the regular way in a square pan.

  2. You can alternate the peanut butter with any nut butter or vegan butter.
