Carrot Cake Squares

Recipe

Duration- 10 minutes + 25 minutes to bake

Serves- 16 pieces

Ingredients

2 cups All purpose flour

1 + ½ cup Brown sugar

1 tsp Baking soda

½ tsp Salt 

2 tsp Cinnamon powder

1 tsp Nutmeg powder

1 + ½ cup Grated carrots

1/4th cup Crushed pineapple

½ cup Vegetable oil

1 tsp Vanilla extract 

1 tbsp Apple cider vinegar

1 cup Chopped walnuts

Method

1. In a large bowl sift AP flour, add sugar, baking soda, cinnamon powder and nutmeg powder, and mix together until fully incorporated. 

2. Add the crushed pineapple, grated carrots, oil, apple cider vinegar and vanilla in a bowl, and mix it into a thick batter. 

3. Fold in the dry mixture into the wet one, and add the chopped walnuts once fully incorporated. Pour the mixture into a square tin of 9x9 inches.

4. Bake in a preheated oven at 180°C, for 20-25 minutes, or until a toothpick inserted into the centre comes out completely clean. 

5. Allow it to cool completely before demoulding, once demoulded cut into squares.

6. Frost generously, and serve.
