Vegan Coconut,Chocolate and Peanut cookies

Baking time- 10 minutes
Serves- Makes 15-20 pieces
Ingredients
150g Jaggery sugar
45g Castor sugar
30ml Water
4g Salt
120g Coconut oil (melted) (can be substituted with 150g of margarine)
335g All purpose flour
7g Baking powder
5ml Vanilla extract
250g Vegan Milk chocolate chips
125g Salted peanuts
Method
In saucepan, add all the sugars, water and salt. (omit salt if peanuts are salted) mix till it dissolves completely. Don’t unnecessarily keep on flame as the sugar will burn. Once dissolved set aside.
In a bowl, add sifted flour, baking powder, coconut oil and mix.
Once the above mixture is ready, add in sugar mixture and mix till fully incorporated, and it forms a dough, gradually add the vanilla and mix.(You can store the dough in the chiller for <5 days)
Take peanuts and chocolate chips and pulverise, till coarse. DO NOT TURN INTO A POWDER.
Mix the peanuts and chocolates and add 2/3rd of them to the cookie dough.
Divide your dough into small balls and coat with the remaining 1/3rd chocolate and peanut mixture.
Chill for a 8-10 minutes.
Bake at 190° for 5 minutes, cool and enjoy.
