Clementine Olive Oil Cake

Recipe

Preparation time - 10 minutes

Baking time - 40-45 minutes

Serves - 5-6

Ingredients

3/4 cup + 1 Tbsp extra virgin olive oil, plus more for the pan

3/4 cup sliced almonds

1/3 cup plus 3/4 cup granulated sugar

1 + 1/2 cup all-purpose flour

2 tsp baking powder

4 large eggs / flax eggs

2 tsp clementine zest plus

1/4 cup Clementine juice

Method

  1. In a bowl, toss 3/4 cup sliced almonds with 1 tbsp oil and 1/3 cup sugar.

  2. In another bowl, whisk together flour, baking powder, and salt.

  3. Using an electric mixer, beat flax eggs / eggs and remaining ¾ cup sugar until light, fluffy, and more than doubled in volume, 4 to 5 minutes.

  4. With the mixer on high, gradually add remaining ¾ cup oil.

  5. Reduce mixer speed to low and beat in clementine zest and juice.

  6. Gradually add flour mixture, beating just until incorporated. Spread batter in prepared pan.

  7. Sprinkle almond-sugar mixture on top and bake in a preheated oven at 180°C, until golden brown and wooden pick inserted in centre comes out clean (for about 40-45 minutes).

  8. Let the cake cool and serve!
