Clementine Olive Oil Cake

Ingredients
3/4 cup + 1 Tbsp extra virgin olive oil, plus more for the pan
3/4 cup sliced almonds
1/3 cup plus 3/4 cup granulated sugar
1 + 1/2 cup all-purpose flour
2 tsp baking powder
4 large eggs / flax eggs
2 tsp clementine zest plus
1/4 cup Clementine juice
Method
In a bowl, toss 3/4 cup sliced almonds with 1 tbsp oil and 1/3 cup sugar.
In another bowl, whisk together flour, baking powder, and salt.
Using an electric mixer, beat flax eggs / eggs and remaining ¾ cup sugar until light, fluffy, and more than doubled in volume, 4 to 5 minutes.
With the mixer on high, gradually add remaining ¾ cup oil.
Reduce mixer speed to low and beat in clementine zest and juice.
Gradually add flour mixture, beating just until incorporated. Spread batter in prepared pan.
Sprinkle almond-sugar mixture on top and bake in a preheated oven at 180°C, until golden brown and wooden pick inserted in centre comes out clean (for about 40-45 minutes).
Let the cake cool and serve!
