Mango Phirni
Recipe
Preparation time - 20 minutes
Cooking time - 30/40 minutes
Serves - 3-4
Ingredients
1/4th cup Long grain basmati rice
1 large Mango crushed to pulp
3 cups Milk
3 tbsp Sugar – you can alter this depending to taste and sweetness of mango
½ tsp Cardamom powder
10/12 Almonds, Pistachios chopped and sliced thin
Saffron strands to top
Method
1. Rinse your rice till the water runs clear.
2. Spread the rice on a kitchen towel and dry.
3. While the rice is drying, crush your mango into a pulp with a fork.
4. Once completely dried, crush the rise into a semolina like grain.
5. In a heavy bottomed pan, take the milk and boil it on a low flame. Keep stirring so the milk doesn’t burn.
6. When the milk begins to boil, add the sugar followed by the rice and stir at intervals.
7. The mixture will thicken once the rice starts to cook.
8. Switch off the flame once the rice is cooked and mixture has thickened.
9. Keep the phirni aside to cool.
10. Once cooled, add in the mango pulp and mix well.
11. Add in the slivered nuts and cool in the fridge.
12. Top with saffron strands and serve cold.
