Peanut Butter Spiced Rice

Preparation time - 15 minutes
Cooking time - 20 minutes
Serves - 2-3
Ingredients
1 tbsp coconut oil
1 tbsp sesame oil
2 cloves of garlic
1 tsp diced ginger
2 birds eye chillis
4 spring onions stalks
1.5 tbsp Maple syrup
1/4 cup Soy sauce (don’t fill the entire cup)
1/3 cup Asparagus (diced)
80g baby corn
1 red Pepper (diced)
1/3 cup Peas
1/3 cup Broccoli (diced)
500g Basmati rice (cooked)
120g smooth peanut butter
2 tbsp water
Method
Warm coconut and sesame oil in a wok or a pan.
Add ginger and garlic to the pan and cook for 1 minute.
Add the chilli and spring onion, and fry for 1 minute.
Pour in the maple syrup and soy sauce and cook for 1 minute.
Add in the asparagus, baby corn and red pepper and cook for 2-3 minutes.
Add the peas and broccoli. Cook this for 1-2 minutes.
Stir in the peanut butter and cook till the mixture gets thick.
Stir in some water if the mixture is too thick.
Fold in the rice and allow the mixture to cook for 4-5 minutes.
Sprinkle with toasted sesame seeds and serve with a slice of lemon.
